Ingredients: 

  • 4 russet potatoes (8 of a smaller variety) 
  • 2 bell peppers any color 
  • 1 red onion 
  • 1 yellow onion 
  • Taco seasoning pack 

Directions: 

  1. Cut bell peppers and onions into strips and set aside 
  2. If using russet potatoes peel them, if other variety no need to peel 
  3. Large dice potatoes (if not cooking immediately put into a bowl of water to stop oxidation) 
  4. In two bowls toss onions and peppers in one and potatoes in the other, with oil and the seasoning packet 
  5. Place potatoes on an oven tray and onions and peppers on a separate one (the onions and peppers will burn by the time the potatoes are done cooking) (the peppers and onions can alternatively be cooked on the stove top, however it is much easier to cook the potatoes in the oven) 
  6. Cook pepper and onions 20 minutes and potatoes for 30 minutes in a 350 degree oven 
  7. Recombine and let cool for 10 minutes, then serve 

Ingredients:

  • 4 zucchinis 
  • Thyme 
  • Garlic 
  • 2 oz olive oil 

Directions:

  1. Cut zucchini lengthwise and crosshatch with a sharp knife 
  2. Salt and set aside for 10 min 
  3. Chop herbs and add to olive oil in a small bowl 
  4. Wipe off the zucchinis with a paper towel (the salt will have drawn out moisture from the zucchinis) 
  5. Spoon or brush on the oil and herb mixture and bake in a 350 degree oven for 45 minutes 
  6. Let cool down for 10 minutes and serve 

Ingredients:

  • One 18 oz jar of peanut butter 
  • One cup of flour (all purpose) 
  • One cup of sugar 
  • Six tablespoons of water 
  • One teaspoon of baking soda 

Directions:

  1. In mixer or bowl, mix all ingredients together (order is not important as long as they are well incorporated) 
  2. Using an ice cream scooper or spoon portion out two oz balls on a baking sheet 
  3. Press down on cookie dough balls with a fork in a crosshatching motion (two times with 90 degrees of rotation in between) 
  4. Bake in a 350-degree oven for 13-15 minutes (chewy or firm) 
  5. Let cool for 10-15 minutes before serving
