Ingredients: 

  • 6 eggs 
  • 4 oz shredded cheddar cheese 
  • 1 large tomato 
  • 1 zucchini 
  • 1 yellow onion 
  • ½ cup milk 

Directions: 

  1. Dice zucchini and onion and cook until soft and sweated (10-15 min), then set aside 
  2. Quarter tomato, deseed and dice tomato, then set aside 
  3. In mixing bowl crack eggs and add milk, then whisk until combined and eggs are runny 
  4. Add vegetables and cheese and continue mixing, season with 1 teaspoon of salt and any other seasoning desired  
  5. Coat muffin tin with oil spray, then ladle egg mixture in 
  6. Cook in 350 degree for 20 minutes, let cool and serve 

Ingredients: 

  • 1 lb. strawberries 
  • 4 oz feta cheese 
  • 4 oz sliced almonds 
  • 2 oz olive oil 
  • 1 oz balsamic vinegar 

Directions:

  1. Quarter strawberries and to mixing bowl (save 1 strawberry for dressing) 
  2. Crumble feta over strawberries and add sliced almonds 
  3. In small mason jar or other closable container muddle the one uncut strawberry 
  4. Add olive oil, balsamic vinegar and a pinch of salt and shake 
  5. Toss salad with strawberry vinaigrette and serve 

Note: make with spinach leaves, salad greens, or thinly sliced kale if desired
