  • One 15 oz can of black beans
  • One 15 oz can of diced tomatoes 
  • One 15 oz can of corn 
  • One 15 oz green beans 
  • 2 oz Olive oil 
  • Salt 

Directions 

  1. Open and drain all cans 
  2. Mix in bowl and add olive oil 
  3. Salt to taste

  • 12 oz of brussels sprouts 
  • Oil 
  • Salt 
  • Pepper 

Directions: 

  1. Halve brussels sprouts 
  2. In bowl toss with oil, salt, and pepper 
  3. Place on baking sheet and bake in 350-degree oven for 25 minutes

  • 4 Sweet potatoes 
  • 1 Tablespoon cinnamon 
  • Salt 
  • Oil 

Directions

  1. Halve sweet potatoes
  2. Lay on baking sheet with the cut side facing up 
  3. Brush on oil and salt 
  4. Sprinkle potatoes with cinnamon 
  5. Bake in 350-degree oven for 50 min to 1 hour or until you can easily poke through the potato with a knife

  • 8 large carrots 
  • 1 teaspoon Turmeric 
  • 1 teaspoon Allspice 
  • 1 teaspoon dried tarragon 
  • Salt

  1. Halve carrots long ways 
  2. In large bowl toss with oil, then spices, tarragon, and salt 
  3. Lay on baking sheet, and cook in 350-degree oven for 25 min or until you can easily poke through with a knife
